Chile is a narrow world of its own: Pacific on one side, Andes on the other – and more landscape in between than one trip can hold.

In the south it becomes greener, wetter and a little wilder. Araucanía is a region of lakes, monkey-puzzle trees, rivers and volcanoes. Pucón adds energy; Caburgua slows it down again. The Landhaus San Sebastián nature lodge waits right between the two.

Huerquehue is close by on our side of Pucón. Villarrica opens into volcanic and glacial terrain. Conguillío is the grand day trip to Llaima, lava fields and ancient araucarias. We help match weather, fitness and curiosity to the right day.

The park of lakes and araucarias is our natural neighbour. The 10.8-kilometre Los Lagos trail climbs towards mountain lakes; shorter routes such as Ñirrico and Integración open the forest for gentler days.

It is the first good reason to stay at the table a little longer.

Home-baked bread, preserves made from our fruit, fresh juices, eggs and seasonal produce – according to what garden, farm and region genuinely offer. Not identical every day. Thankfully.

In Gabriela’s kitchen, garden and region do not become a sustainability concept. They become dinner.

In the evening

Gourmet begins in the soil.

Gabriela does not cook for stars. She cooks for curious people.

Our vegetables and fruit, produce from neighbours and the local market, herbs, flowers and whatever the season decides. The food is ambitious because it stays close to its ingredients – and relaxed enough for laughter at the table.
